Organic farmhouse in Bergamo
Polisena is the first vegetarian farm restaurant in the province of Bergamo. The decision to radically change our menu, which used to be more in line with the culinary tradition of the area, was prompted by deep reflections and thoughts about the current state of the environment and of our food system.
This choice goes hand in hand with the broader sustainable approach we have adopted in the cultivation of our Tosca vineyards, where we follow the principles of organic viticulture. The farmhouse itself, originally built in 1700 and renovated between 2010 and 2011, is an example of sustainable architecture realised with local materials. The highly energy-efficient building is 80% autonomous in energy production, as proved by the sustainable architecture certificate KlimaHotel.
We like to think that this approach to gastronomy and hospitality can make a difference for our guests and, at the same time, to the Nature surrounding us.
